| Raw Chutney with Green Tomatoes |

| Serves: Makes about 2 cups chutney (1cup = 8 oz) |

| |
| Ingredients: All cup measurements refer to a 8 oz cup (1 cup = 8 oz) |
| • Raw green tomatoes - 4 med sizes |
| • Cilantro - 1 cup washed and chopped (along with stem & leaves) |
| • Ginger - 1 tbsp, washed and chopped |
| • Green chili - 2 |
| • Garlic – 4 pods |
| • Lemon juice - 1 tbsp |
• Salt for taste |

| Process: |
| • Roast or grill the tomatoes till the skin turns blackish. Now transfer the tomatoes to a plate. |
| • Peel and discard off the outer charred skin. Retain the tomatoes for blending. |
| • Now add all the ingredients except salt, in a blender. |
| • Blend till smooth and watery. |
| • Transfer and adjust salt to taste. Mix well. |
| • Store in a container and serve the fresh raw chutney with corn chips. |

| Advice: |
| The chutney can be preserved in the refrigerator for 5-6 days. Remember to add more salt and lemon juice if needed to be preserved longer. |
