Raw Chutney with Green Tomatoes
 
 
Serves: Makes about 2 cups chutney (1cup = 8 oz)
Preparation time: 15 min
 
Ingredients: All cup measurements refer to a 8 oz cup (1 cup = 8 oz)
• Raw green tomatoes - 4 med sizes
• Cilantro - 1 cup washed and chopped (along with stem & leaves)
• Ginger - 1 tbsp, washed and chopped
• Green chili - 2
• Garlic – 4 pods
• Lemon juice - 1 tbsp
• Salt for taste
 
Process:
• Roast or grill the tomatoes till the skin turns blackish. Now transfer the tomatoes to a plate.
• Peel and discard off the outer charred skin. Retain the tomatoes for blending.
• Now add all the ingredients except salt, in a blender.
• Blend till smooth and watery.
• Transfer and adjust salt to taste. Mix well.
• Store in a container and serve the fresh raw chutney with corn chips.
 
Advice:
The chutney can be preserved in the refrigerator for 5-6 days. Remember to add more salt and lemon juice if needed to be preserved longer.
